Tonight's pot roast was unsatisfactory--tougher than it ought to be, and not very flavorful. And for some reason, I have great trouble with reducing liquids--I simmered the cooking liquid for 15 minutes instead of 5, and still it was a lot more than the 1 cup it was supposed to reduce to. Hmpf.

Y'know, I have that same problem. I think it ends up killing the flavor of my keema masala because I have to boil the liquid for near an hour, not just the 15 minutes they suggest.

I've never produced satisfactory pot roast. I am told that the secret ingredient is a pressure cooker, but I don't have one so I can't verify this.

I have made very satisfactory pot roast (without a pressure cooker)--but not last night.
